Because a published price would be wrong for almost everyone who read it. A single-site salon taking thirty calls a week and a four-site practice taking four hundred are not the same job to set up or to run, so we quote each business once we know what it actually needs.
Can I start with out-of-hours and overflow only?
Yes, and most do. The assistant takes only the calls that currently reach no one, and your team keeps every call it answers today. That is how the 30-day pilot works.
